Default REC - Applets

Cotlets may be made by substituting canned apricots for the
applesauce.

Applets

Recipe By :Carol Peterson
Serving Size : 0 Preparation Time :0:00
Categories : Candies Family Recipes

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 ounce gelatin powder
1 cup unsweetened applesauce
1 1/2 cups unsweetened applesauce
4 cups granulated sugar
1 orange or lemon zest -- grated
2 teaspoons vanilla extract
2 cups walnuts -- chopped
powdered sugar -- for coating

Soak gelatin in 1 cup applesauce for 30 minutes.

Bring 1-1/2 cups applesauce to boiling point.

Add sugar and applesauce with gelatin to boiling applesauce; add
grated orange or lemon rind.

Boil until thick and yellow-looking, approximately 12 minutes. Remove
from heat.

Add vanilla and walnuts.

Pour into buttered pan and let stand 8 hours or more, or overnight in
refrigerator.

Cut in squares and roll in powdered sugar.

Oh, I can't thank you enough! I'm almost through with my semi-annual gift
box (Christmas and birthday) and it never occurred to me that I could make
my own. They're the best candies EVER!

Wow do these sound good. I had someone give me a box of these for
Christmas once and this reminds me how much I enjoyed them.

Shoot! This recipe was transferred from Now You're Cooking to
MasterCook, and all kinds of weird things happened. I honestly don't
know, as I haven't made these in decades. Perhaps one Packet???

zxcvbob has brought it to my attention that one OUNCE of gelatin might
be a tad excessive. I don't know. It's been many moons since I've
made these, and my memory is nearly non-existent these days.

If anyone can shed some light on the proper amount of gelatin to use
in this candy, it would be appreciated by many.

Very strange things happened when I imported my mom's recipes from Now
You're Cooking to MasterCook, and this may very well have been one of
them.

I'm sorry for any failed candy attempts.
